The nice thing about gas stoves, however, is that once they are turned on, they have an instant flame that remains constant. It cooks food evenly and quickly.

Clean up can be more problematic with a gas stove because the burners are generally covered with a frame, and if anything spills under there, it will have to be removed and wiped up. It generally doesn’t take a special cleaner to accomplish that task, so that could be a bonus.
